Roast Beef Wraps

My name is Debra Chaffins and I love to cook. I’ve been doing it since I was 13, more which was sometime in the mid 70’s.

A few years ago, view my husband started encouraging me to put away the recipes and cookbooks I so loved, and to start making things I wanted to make, the way I wanted to make them. His reasoning was, that’s really what I was doing anyway.

These are my favorites.

I wanted to do something different than the standard ham roll ups, mind
so I created this savory treat.

1/2 lb thinly sliced fresh roast beef
1/2 cup onion & chive cream cheese
– softened
Sun Dried Tomato Spread
1/2 cup sun-dried tomatoes
(not packed in oil)
1/8 cup bourbon
1/8 cup porcini favored olive oil
1/2 teaspoon garlic powder
Pinch of ground black pepper
Pinch of cayenne pepper

In a food processor, unhealthy snip the tomatoes into small pieces. Add the remainder of the ingredients and pulse until it forms a thick paste.

Spread a thin layer of cream cheese on each slice of beef. Gently spread a thin layer of the sun-dried tomato spread on top of the cream cheese. Roll up each piece tightly and refrigerate, covered, for at least an hour.

Cut the rolls into 1″ slices and arrange on a platter.
